When Mr UPS left a free Vintage Star Bundt pan on the doorstep, I was eager to try it out! Fortunately, the one of the bloggers responsible for sending it had a companion recipe on her website: Chocolate Glazed Peppermint Cake
Here is how mine came out (before glazing, which did not go as planned):
Changes I made:
- Substituted applesauce for 1/4 cup of the butter
- Omitted the salt called for in the recipe
- Used crushed candy canes instead of peppermint extract and red food coloring.
- Topped with melted fudge instead of chocolate ganache.
What I would do differently next time:
- Use a few more candy cane bits. It was pepperminty, but could be more so.
- Tweak the applesauce/butter ratio. This was good, but very buttery!
- Find some fudge that melts properly.
