Surprise Cookies (adapted from Grandma Snook's Roll-Out Cookies)
1 cup butter (or real margarine)
1 cup sugar
1 large egg
2 tsp. baking powder
1 tsp. vanilla
2 1/2 cup flour (add up to 1/4 cup more if the dough is too soft)
About 48 milk chocolate balls, Hershey's kisses, or similar confections, unwrapped
Preheat oven to 375°.
In a large bowl, cream butter and sugar with an electric mixer. Beat in egg and vanilla. Add baking powder and flour, one cup at a time, mixing after each addition.
Take about 1 teaspoon dough and flatten slightly. Put the chocolate in the center of the dough and wrap the dough around the sides of the chocolate until the candy is completely hidden. This takes a little practice! Roll the cookie in colored sanding sugar (or regular granulated sugar) and place on a greased cookie sheet.
Bake cookies on top rack of oven for 7 minutes, or until slightly brown underneath.
